Turkey Scallopini - cooking recipe

Ingredients
    4 (4 oz.) turkey breast cutlets
    1/4 tsp. ground pepper
    3 Tbsp. freshly grated Parmesan cheese
    3 Tbsp. Italian seasoned bread crumbs
    vegetable cooking spray
    1 1/2 tsp. olive oil
    1/4 c. white wine
    2 Tbsp. fresh lemon juice
    2 Tbsp. chopped parsley
Preparation
    Place cutlets between unwaxed paper.
    Flatten to 1/8 inch thickness.
    Combine pepper, cheese and bread crumbs; dredge cutlets in mixture.
    Coat a nonstick skillet with cooking spray.
    Add olive oil.
    Place over medium-high heat until hot.
    Add cutlets; cook 2 minutes on each side or until browned.
    Add wine and lemon juice; cook 2 minutes or until heated.
    Transfer to serving platter; sprinkle with parsley.
