Squash Relish - cooking recipe

Ingredients
    10 c. shredded squash
    2 c. green sweet peppers, chopped
    4 c. onion, chopped
    1/2 c. salt
    2 1/4 c. vinegar
    4 1/2 c. sugar
    1 tsp. nutmeg
    1 Tbsp. turmeric
    3 Tbsp. cornstarch
    1 Tbsp. celery seed
    1/4 tsp. ground red pepper
    1 (7 oz.) jar chopped pimiento
Preparation
    Sprinkle salt over the vegetables.
    Soak for 2 hours; drain. Rinse in cold water; drain.
    Add the remaining ingredients.
    Bring to boil; simmer for 30 minutes.
    Spoon into hot, sterilized jars. Adjust lids.
    Process in a water bath for 10 minutes.
    Yields 7 to 8 pints.
