Ingredients

1 c. butter or margarine
1 c. lard
2 c. sugar
3 eggs, beaten
1/4 c. milk
7 1/2 c. flour
2 tsp. lemon extract
1 tsp. salt
2 tsp. nutmeg
1 tsp. cream of tartar
1 tsp. baking soda
2 tsp. baking powder
1 lb. currants, plumped with hot water and drained
Preparation

Cream shortening.
Add sugar and cream well.
Add beaten eggs and milk.
Sift dry ingredients and add to mixture.
Stir in currants.
Roll on lightly floured board to 1/4-inch thickness. Cut with cookie cutter or biscuit cutter.
Bake on ungreased griddle.
Turn when brown.
Turn only once.
Using electric frypan set at 300\u00b0, fry for 5 minutes on each side.
