Carrots Of The Ritz - cooking recipe

Ingredients
    3 c. pared and sliced carrots
    1 chicken bouillon cube
    12 buttery round crackers, crushed (Ritz-type)
    2 Tbsp. minced onion
    2 Tbsp. softened butter
    grated Cheddar cheese
Preparation
    Cook carrots in water with bouillon cube until almost done. Drain and save liquid.
    Coarsely mash carrots. Add crushed crackers, onion, butter and 2/3 cup reserved liquid.
    Mix well. Place in a small buttered baking dish.
    Cover with grated cheese. Bake at 450\u00b0 for 15 to 20 minutes.
    Serves 6 to 8.
