Zucchini Bread - cooking recipe

Ingredients
    2 c. sugar
    1 c. oil
    3 eggs
    1 tsp. salt
    1 tsp. baking soda
    3 tsp. vanilla
    1/2 tsp. baking soda
    3 tsp. cinnamon
    3 c. flour
    2 full size zucchini
Preparation
    Grate the zucchini (skin and seed also); let stand.
    Mix sugar, oil, eggs, baking soda, vanilla, baking powder, cinnamon and flour.
    Mix well.
    Add zucchini and nuts (optional).
    Bake in 2 greased loaf pans for 1 hour at 350\u00b0.
