Jean'S Zucchini Relish - cooking recipe

Ingredients
    4 to 4 1/2 lb. zucchini
    2 medium onions
    1 sweet red pepper
    2 Tbsp. salt
    2 c. sugar
    1 c. vinegar
    2 tsp. celery seed
    1 c. water
    1/8 tsp. ground turmeric
    1 tsp. ground nutmeg
    1/8 tsp. pepper
Preparation
    Grind zucchini, onions and sweet red pepper in coarse grinder. Add salt.
    Mix and let set overnight in refrigerator.
    In the morning, drain and rinse in cold water.
    Put mixture into a 4 to 5-quart kettle.
    Add remaining ingredients.
    Boil gently (covered) for 10 minutes.
    Fill jars.
    Process in water bath for 5 minutes.
