Fresh Apple Muffins - cooking recipe
Ingredients

1/2 c. vegetable oil
1/2 c. sugar
2 eggs
1/2 tsp. vanilla
1 1/2 c. unbleached flour
1/2 c. whole wheat flour
1 Tbsp. baking powder
1/2 tsp. salt
1 1/2 c. peeled and chopped, tart, green apples
1/2 c. chopped pecans
Preparation

Preheat oven to 350\u00b0.
In a large bowl, mix together oil, sugar, eggs and vanilla; beat with a whisk until creamy smooth. In a separate bowl, combine flours, baking powder and salt.
Add to egg mixture, beating just until well blended.
Fold in apples and nuts.
Fill greased muffin tins about 3/4 full.
Bake about 25 minutes or until inserted toothpick comes out clean.
Turn out on wire rack and cool slightly before serving.
