Pineapple Cupcakes - cooking recipe
Ingredients

2 c. four
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1/2 c. shortening
1/2 c. granulated sugar
1/2 c. brown sugar
2 eggs
1/2 c. crushed pineapple
1/2 c. pineapple juice
1 tsp. vanilla or pineapple flavoring
1 small pkg. mint chocolate chips
Preparation

Sift together first 4 ingredients and set aside.
Mix together shortening, white sugar and brown sugar; blend in 2 eggs and beat together 1 minute.
Add pineapple and juice, then dry ingredients; blend.
Add flavoring and chocolate chips.
Fill cupcake cups 3/4 full.
Bake at 350\u00b0 for 20 to 25 minutes.
Frost when cool.
