Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 c. salad oil
    2 c. sugar
    2 c. grated, peeled zucchini
    2 c. flour
    1 tsp. cinnamon
    1/4 tsp. baking powder
    1/4 tsp. soda
    1 tsp. salt
    1 c. nuts (optional)
    1 tsp. grated lemon rind
Preparation
    Beat eggs until light; add sugar, salt, oil and vanilla, mixing well until thick.
    Add zucchini; stir thoroughly.
    Sift flour, cinnamon, baking powder and soda.
    Add, stirring until smooth.
    Add chopped nuts and lemon rind.
    Bake in 2 greased and floured loan pans, about 1 hour in a 350\u00b0 oven.
