Cheese And Onion Potatoes - cooking recipe

Ingredients
    1/4 c. butter/margarine
    4 medium unpeeled red potatoes
    2 Tbsp. dried minced onion
    pepper to taste
    1/3 c. Cheddar cheese, shredded
    chopped fresh parsley
Preparation
    In skillet, melt butter; add potatoes, which have been sliced 1/4-inch thick.
    Add onion and pepper and toss to coat.
    Cover and cook, stirring occasionally, until potatoes are tender, about 10 minutes.
    Uncover; cook until potatoes are browned, about 5 to 7 minutes.
    Top with cheese; cover and remove from heat.
    Let set for several minutes.
    Sprinkle with parsley before serving. Serves 4.
