Ingredients

2 lb. carrots
1/2 c. water
2 Tbsp. butter or margarine
1/4 tsp. cinnamon
2 Tbsp. honey
2 tsp. lemon juice
1/2 c. chopped toasted walnuts (optional)
Preparation

Peel carrots and cut into 3-inch strips.
Place in a large skillet.
Add water and butter.
Cover and cook until tender-crisp, about 5 to 10 minutes, adding more water if necessary.
When carrots are tender, liquid should be nearly gone. Gently stir in the cinnamon, honey and lemon juice.
Simmer for a few minutes.
Add walnuts, if desired and heat for 1 minute longer.
