Zucchini Bread - cooking recipe

Ingredients
    3 c. flour
    1 1/2 c. sugar
    1 tsp. cinnamon
    1 tsp. salt
    1 tsp. baking powder
    3/4 tsp. soda
    2 c. zucchini, shredded
    3 eggs
    1 c. oil
    1 c. pecans, chopped
Preparation
    Mix together flour, sugar, cinnamon, salt, baking powder and soda.
    Add eggs and oil; mix well.
    Add zucchini and nuts; stir just enough to mix together.
    Pour into a greased and floured loaf pan (8 1/2 x 4 1/2 x 3-inch).
    Bake about 1 to 1 1/2 hours.
    The top will split open and a tester comes out clean when done.
    If you prefer cupcakes, make about 2 dozen.
