Grandpa Nystrom'S Swedish Hotcakes - cooking recipe

Ingredients
    6 eggs, beaten until fluffy
    1 qt. milk
    1 c. flour
    1/2 tsp. salt
    1/2 c. oil
    2 eggs, lightly beaten
    1/2 c. milk
    1/2 c. flour
    pinch of nutmeg
    2 Tbsp. butter
    2 Tbsp. juice of fresh lemon
Preparation
    Preheat oven to 425\u00b0.
    Melt butter in the oven in an ovenproof dish.
    I use glass pie pan.
    Mix ingredients in bowl.
    When butter is melted, pour in batter.
    Bake for about 15 to 20 minutes until golden brown and puffed.
    Sprinkle with powdered sugar and lemon. We top with fresh fruit, too.
    Serve immediately.
    Serves one or two.
