Poached Chicken - cooking recipe

Ingredients
    3 lb. chicken (whole)
    salt
Preparation
    Wash chicken with cold water.
    Place in a large saucepan.
    Add water halfway up the chicken with 1/2 teaspoon salt for every quart of water.
    Cover; simmer for 1 hour, turning once or twice. Cool chicken in the broth and refrigerate until needed.
