Ingredients

3 medium raw potatoes, grated
2 eggs, separated
1 1/2 Tbsp. flour
1/2 tsp. baking powder
1 tsp. salt
Preparation

Beat egg yolks; stir in grated potatoes and a mixture of flour, baking powder and salt.
Mix well.
Beat egg whites until rounded peaks form.
Fold into potato mixture.
Spoon about 2 tablespoons of batter for each pancake into skillet (hot grease). Brown on both sides.
Serve with applesauce.
