pork shoulder (fresh)
sauerkraut
various seasonings
Preparation

Remove bone from pork shoulder.
Drain sauerkraut and stuff in the shoulder.
Roll shoulder in flour with various seasonings to taste.
Close opening with sewing or skewers.
Place roast in oven at 450\u00b0, uncovered, in a greased pan.
Reduce heat as it begins to brown to 325\u00b0 and bake about 40 minutes per pound or until tender.
