Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant, peeled and sliced
    1 1/2 c. cracker crumbs
    4 eggs
    1/2 tsp. pepper
    1 1/2 c. grated sharp cheese
    1 1/2 c. milk
    1 tsp. salt
    1 stick margarine, melted
Preparation
    Preheat oven to 325\u00b0.
    Cook eggplant until mushy; drain.
    Add all ingredients, reserving 1/2 cup cheese, 1/2 cup crumbs and small amount of butter.
    Mix well.
    Pour into baking dish; sprinkle with reserved cheese, cracker crumbs and melted butter. Bake at 325\u00b0 for 25 to 30 minutes.
