Preheat oven to 400 degrees.
Take an old cookie sheet. Spray it with Pam, In a bag, combine all ingredients except the side pork.
Then add one strip at a time, coat evenly.
Lay on baking sheet.
Do this until they are all coated.
About half way through the baking time, check and turn over with a tong.
Preheat one side of grill on medium (or
efore serving.
For optional side salad, mix olive oil, wine
enter of the foil, skin side down.
Sprinkle the salmon
In a large frying pan, brown pancetta or side pork until lightly browned (about 10 mins.) Add onion to pancetta and stir often until onion is sauteed (about another 10 mins.) Add cole slaw mix and stir often (for about another 10 mins.) until cabbage is totally wilted and done.
The cabbage will look like a lot at first but it really cooks down.
Add pepper to taste.
I have used proportionate amount of bacon for this recipe with excellent results.

Rub olive oil on breasts, sprinkle with salt and pepper.
Bake at 350\u00b0 for 45 minutes.
Cool, then chop or slice to use in your recipes.
Makes: 4 entre salads at $3.41 each (or 6 side salads).

Cool on wire rack. Reduce oven temperature to 300 degrees.
