Cook pasta as directed, al dente. Drain when done and return to pan.
In a large sauce pan, heat oil to medium and saute mushrooms and garlic.
Add tomatoes, chicken, and italian seasoning and simmer an additional 2 minutes.
Add fresh spinach and cooked pasta.
Add salt and pepper as desired.
Heat through and serve immediately topping with parmesan or feta.
(You could also use raw diced chicken and cook that first instead of using the cooked chicken.).
Cook pasta per package directions. I recommend using Barilla Plus pasta.
In a pan heat the olive oil, garlic, salt and pepper. I use my garlic press but you can also just use whole or sliced cloves.
Saute the garlic until it is golden brown.
Turn off the heat and let it stand until the pasta is finished cooking.
Add pasta to the oil, toss to coat and sprinkle parmesan over the top.

Boil water then add noddles in, cooking until desired softness.
In the meantime, pour all the sauce ingredients into a sauce pan, heating at medium heat.
Mix until all ingredients are incorporated before allowing to simmer and thicken, stirring often until at desired thickness and cheese is melted and incorporated. Add more milk to simmer if you wish a thinner sauce. Add more cheese to taste if you prefer.
Drain pasta and pour sauce over pasta. Enjoy!
