Basic Oven Roasted Peanuts

Place raw peanuts, in shell or shelled, one layer deep in a shallow baking pan. Sprinkle salt over.
Roast in a 350 degree F oven; 15 to 20 minutes for shelled and 20 to 25 minutes for in shell peanuts.
Remove from heat just short of doneness desired, as peanuts continue to cook as they cool.

Sugared Peanuts

Combine peanuts, sugar and water.
Boil until all moisture is boiled out. (Peanuts will be coated with sugar.)
Stir continuously.
Pour onto cookie sheet and bake at 300\u00b0 for approximately 25 to 30 minutes or until all nuts are well toasted. Stir occasionally.

Sugared Peanuts

Beat egg white, add sugar and beat until stiff.
Roast raw peanuts until light brown stirring often.
Pour hot peanuts into egg white mixture and spread on a cookie sheet to cool.
Mix cooled nuts with red and green M&M's for a great Christmastime snack.

Garlic Fried Peanuts

Heat 1 cup of oil until moderately hot.
Add 1 cup of shelled raw peanuts and fry for 2 minutes until crisp.
Drain on paper towel and sprinkle with garlic just before using (packaged peanuts can be used).

Sugar Coated Peanuts

Bring sugar and water to a boil; stir in raw peanuts and continue to stir until dry and peanuts are coated.
Pour on lightly greased cookie sheet and bake about 35 minutes at 300\u00b0. Remove from oven and cool.

Candied Peanuts

Mix sugar and water in a saucepan and bring to a boil to dissolve sugar.
Add raw peanuts and boil over medium heat until sugar crystallizes and no syrup is left (15 to 20 minutes).
Stir while boiling to evenly coat peanuts.
Spread nuts on ungreased cookie sheet.
Place in a 350\u00b0 oven for about 20 minutes, stirring every 5 minutes so that nuts will be evenly roasted. Remove from oven and cool.

Sugar Crisp Peanuts

In a saucepan, mix sugar and water and bring to a boil to dissolve sugar.
Add raw peanuts and boil over medium heat until sugar crystalizes and no syrup is left.
Stir while boiling to evenly coat peanuts.

Sugared Peanuts

Put sugar and water in large iron skillet.
Bring to a boil. Add raw peanuts, reduce heat to medium.
Stir constantly until all liquid is gone.
Pour into lightly greased pan or skillet.
Place in oven at 300\u00b0 for 20 minutes.
Stir several times.
Let cool.

Coated Peanuts

Bring to a boil sugar and water.
Pour raw peanuts into mixture.
Cook until all liquid is gone.
Must be completely dry and no shine.
(Stir with a wooden spoon.) Pour onto cookie sheet. Cook for 20 minutes at 300\u00b0.
Stir every 5 minutes.
Take out and pour onto cool cookie sheet.

Sugared Pecans Or Peanuts

Combine sugar, water and butter.
Boil until syrup will spin a thread.
Pour
in 2 cups pecan halves or raw peanuts and stir constantly until syrup begins to harden.
Pour out on cookie sheet and separate.
Sprinkle with salt.
Bake at 300\u00b0 for about 10 minutes, stirring occasionally.
Allow to cool.

Let simmer for 30-40 minutes, stirring every 7-10 minutes (if you don't, the peanuts floating on top won't cook through). When done (peanuts should be a little crunchy yet smushy in your mouth, and taste done), leave peanuts to soak in the brine while they cool.
