Spaghetti Sauce - cooking recipe

Ingredients
    1/2 cup high quality olive oil
    6 cups chopped onion
    8 cloves garlic
    2 cups chopped pepper (mix hot & sweet)
    16 cups crushed fresh tomatoes (use blender)
    1/2 cup chopped fresh basil
    1/2 cup chopped fresh rosemary
    1/4 cup chopped fresh oregano
    1/4 cup balsamic vinegar
    1/4 cup rice vinegar
    2 tablespoons salt
    2 teaspoons black pepper
    2 teaspoons cumin
    1 can tomato paste
    1 teaspoon xanthan gum (optional)
Preparation
    Heat oil in a large sauce pot over medium heat. Add onion, garlic, and peppers, saute until onion is beginning to be translucent. Add the rest of the ingredients, increase heat and bring to a gentle boil. Reduce heat and simmer, stirring often, until sauce reaches desired consistency. Stir in xanthan gum. Process as desired.
