Jessica'S Thai Coconut Chicken - cooking recipe

Ingredients
    4 chicken breasts
    1 can coconut milk
    2 garlic gloves
    1 1/2 inches of finely chopped fresh green chlli
    1 1/2 inches of finely chopped fresh red chilli
    1 inch square of ginger, grated
    2 1/2 tablespoons soy sauce
    2 limes - zest and juice
    1 tablespoon sugar
    1/2 bunch cilantro leaves
Preparation
    Preheat the oven to 375 degrees F.

    Put all the ingredients except the chicken and cilantro in a food processor or blender and blend for 30 seconds. Then add the cilantro and blend for further 10 seconds.

    Trim chicken and season with salt and pepper. Marinate in the sauce for a few hours.

    Heat frying or grill pan, add small amount vegetable oil and brown both sides of chicken.

    Transfer to a roasting pan and cook in oven for 15 mins. While the chicken is cooking, cook and slightly reduce the marinade, seasoning as needed.

    Serve the chicken over rice and pour the sauce over, garnish with additional cilantro if desired.
