Madeline'S Lemon Loaf - cooking recipe

Ingredients
    1/2 cup Crisco shortening
    1 cup of sugar
    2 eggs
    grated rind of one lemon
    1 1/2 cup flour
    2tsp baking powder
    1/2 tsp salt
    1/2 cup of milk
    juice of one lemon
    1/4 cup sugar
Preparation
    Blend 1cup sugar with Crisco. Then add in 2 beaten eggs. Mix very well.
    Add lemon rind and blend.

    Mix dry ingredients together well. Flour, baking powder and salt.

    Alternating, add 1/2 of milk and flour mixture into the crisco and butter mix, slowly in parts until all blended.
    Pour into 2 small loaf pans. sprayed with pam.
    Bake at 350 for 1 hour.
    After done, mix the lemon juice and 1/4 cup sugar together and pour over top of loaves and let it sink in. Serve after cooled.

    Very nice with whip cream and berries and a bit of fresh mint!
