Chicken Curry - cooking recipe
Ingredients

1 chicken or 4-6 chicken breasts, cut up
3 C. white rice, cooked
2 pkg. (10 oz. each) frozen chopped broccoli, thawed
2 cans (10 3/4 oz.) condensed cream of mushroom soup, or chicken soup
1 C. mayonnaise
3/4 C. mik
1 T. lemon juice
2 tsp. curry powder
Preparation

Heat oven to 350 degrees.
Coat a 12x7x2\" baking pan with nonstick cooking spray.
Spoon cooked rice into baking dish and spread evenly. Scatter 3/4 of the broccoli over the rice. Chop the chicken into bite size pieces and spread evenly over top. In a large bowl, whisk the soup, mayo, milk, lemon juice and curry powder until blended and smooth. Pour evenly over the top. Sprinkle remaining broccoli over the top. Bake 350 degree oven covered for 30 min. Uncover and bake 15 more minutes. Serve hot.
