Cucumber Edamame Salad - cooking recipe

Ingredients
    2 large cucumbers
    1/2 cup prepared (steamed) edamame, shelled
    1 medium red pepper, small dice
    1 jalapeno pepper, small dice
    2 cloves garlic, finely chopped
    1/2 teaspoon grated fresh ginger
    Juice of 1 lime
    1/4 cup chopped scallions
    2 tablespoons red wine vinegar
    3 tablespoons canola or olive oil
    1 tsp whole seed Dijon mustard
    1/8 tsp chili powder
    1/2 tsp kosher or sea salt (approximate, to taste)
    freshly ground pepper
Preparation
    Combine all ingredients. Taste and adjust seasoning (salt / pepper. Let sit in refrigerator for one hour before serving.
