Open Faced Steak Sandwich - cooking recipe

1.5 lbs\tBeef sirloin steak
1 loaf of foccacia bread
4 oz\tJalapeno cheese
4T\tGarlic aioli
6T\tCompound butter
Marinade
2 \tFresh rosemary sprigs
2T\tMinced garlic
1T\tGrainy mustard
3T \tExtra virgin olive oil
1T\tWorcestershire sauce
1/2 cup\tOnion (minced)
2T\tLemon juice
1t\tblack pepper
Salad
8 oz\tSpring mix
2T\tLemon juice
5T\tExtra virgin olive oil
1/4 \tRed onion 4T\t\tCilantro leaves
Kosher salt \t\tBlack pepper
Preparation

mix marinade and pour over steaks in a sealable plastic bag. marinate for 1 hour or over night.
mix salad ingredients and place vovered in cooler
cut foccacia loaf into 4 equal squares then slice in half. coat heel and crown of foccacia with compound butter and set aside.
heat grill to 400 - 450 degrees. remove steaks from marinade and grill 8 minutes turning once for a medium rare. remove and let rest 5 minutes before slicing.
toast foccacia to golden brown then melt jalepeno cheese on the toasted foccacia.
slice steaks thin and layer on bread. top with a good dollup of the garlic aioli and top with salad mixture. drizzle your best olive oil over top and serve
