Vegetarian Chili - cooking recipe

Ingredients
    2 medium onions, chopped
    1 red bell pepper, chopped
    1 jalapeno pepper, chopped
    8 oz. fresh mushrooms, chopped
    3 T pure chili powder
    1 T cumin
    1 t red pepper flakes
    2 t garlic powder
    1 t dried oregano
    2 jars crushed tomatoes (24 oz)
    2-3 T tomato paste
    1 cup texturized vegetable protein
    1/4 cup water
    1 can kidney or other beans
    Optional: grated cheddar cheese, scallions, sour cream
Preparation
    1. Saute onions, peppers and mushroom until all soft and wilted.
    2. Add spices and stir about 1 minute.
    3. Add tomatoes, tomato paste, TVP and water. Let simmer 2 hours. Add water or vegetable broth if it gets too thick.
    4. Add beans before serving.
    5. Put out optional toppings and serve over rice, corn bread or spaghetti.
