Vegan U.N. Couscous - cooking recipe
Ingredients

2 cup(s) vegetable broth
4 cup(s) uncooked Swiss chard
4 Tbsp minced garlic
1 small uncooked onion(s)
1 medium uncooked carrot(s)
1/4 medium sweet red pepper(s)
1 1/4 cup Osem Couscous, Israeli
1 tbsp Kelapo Coconut Oil, Extra Virgin
(optional) 1 pack SoyBoy Caribbean Tofu
Preparation

1) Bring 1 3/4C of vegetable broth to boil
2) Chop onion, red pepper, and carrot. Garlic too if you don't have ready-minced.
3) Add couscous to vegetable broth and turn to simmer. Close the lid and cook approx. 10 minutes until broth evaporates.
3) While couscous is cooking, add oil to a wok set to medium heat. When oil is heated add onion and garlic.
4)Saute onion and garlic for 3 minutes then add cumin, herbamare salt and stir cooking for one minute.
5) Chop Swiss chard into edible slices (remember they will wilt so not super tiny)
6) Add red pepper and carrot. Turn heat down to medium/ low.
7) Stir in Swiss Chard and cover pan. Cook until chard is wilted maybe 5-10 minutes stirring occasionally.
8) Add finished couscous and remaining 1/4C of broth to the chard mixture, mix and cook covered for 5 minutes.
OPTIONAL) Grill or lightly brown in pan tofu and add chopped slices to the pan after finished cooking.
