Ingredients

1 cup all-purpose flour
1 tbsp sugar
2 tsp baking powder
1/4 tsp salt
1/2-1 tsp cinnamon
1 beaten egg
1 cup milk
2 tbsp canola oil (or other light oil)
1/2 cup peeled and cored apple, grated
Preparation

In a medium bowl, mix together dry ingredients, set aside.
In a small bowl or measuring cup, mix egg, milk and oil.
Add liquid mixture to dry mixture, stir until just moistened and still lumpy.
Stir in grated apple just to combine.
Cook over medium heat in a non-stick pan, approx. 2 minutes per side or until golden brown.
Serve with butter and maple syrup or cottage cheese and fruit.
