Blacken Scallop Salad - cooking recipe

Ingredients
    3 cups mixed greens (arugula, endive, baby spinach)
    2 Tbsp. Blue Cheese
    3 Oz. Hot bacon Vingrette
    3 large Scallops
    1 Oz. Cajun seasoning
    1 oz. Olive oil
Preparation
    1). Heat olive oil in a saute pan until it begins to smoke.
    2). Dredge the scallops in cajun seasoning and sear in saute pan 2-3 minutes per side
    3). While scallops are cooking place mixed greens in a salad bowl and top with blue cheese.
    4). WHen scallops are finished arrange them on top of greens and ladle dressing over the salad
