Pan Fried Baby Artichokes With Gremolata - cooking recipe

12 baby artichokes, 2 cups buttermilk, 1 cup all purpose flour, pinch cayenne Salt and pepper
Olive oil fro frying, 1/2 cup chopped parsley, 1 small garlic clove finely chopped, 1 teasp each finely grated lemon and orange zest, 1 tablespoon roughly chopped capers, Lemon wedges
Preparation

Remove tough exterior leaves from artichokes Trim stems cut off tops halve lengthwise. Cover with buttermilk soak 5-10 minutes
Mix flour cayenne1 tsp salt and 1/2 tsp pepper. Drain artichokes, dip in seasoned flout to coat
Heat 1/2 inch po; in a wide skillet until wavy carefully slipping in artichokes one at a time taking care not to crowd the pan. Fry gently until one side is well browned, 2 minutes, then turn over and brown the other side Drain on pepper towels sprinkle with salt
Combine parsley, garlic, lemon and orange zest and capers. Put fried artichokes on a platter, sprinkle generously with parsley mixture Serve with lemon wedges
