Classic Lentil Soup - cooking recipe

Ingredients
    I cup brown lentils
    4 cups Kitchen Basics Vegetable Stock
    1/4 cup dry red wine
    2 cups canned crushed tomatoes (or 1 1/2 pounds ripe tomatoes peeled, seeded, and chopped)
    1 carrot, sliced
    1 onion, chopped
    1 celery stalk, sliced
    1 garlic clove, minced
    2 tsp. fresh basil, chopped
    1/4 tsp. dried coriander (cilantro)
    6 tbsp. Parmesan Cheese, grated
Preparation
    Rinse lentils. Combine all ingredients (except grated cheese) in a large saucepan. Bring to boil; then reduce to low. Cover and simmer about 25 minutes, until the lentils are tender. Ladle into bowls & sprinkle with grated cheese.
