Homemade Spinach Pasta - cooking recipe

Ingredients
    10 oz. spinach, steamed and chopped finely (or food processed), and squeezed dry
    3 1/2 cups (14 oz.) flour
    2 large eggs plus 1 egg yolk
    olive oil as needed
Preparation
    1. In bowl of stand mixer, measure out flour. Add eggs and spinach. Using the dough hook begin to knead on low. If the mixture still seems shaggy after a few minutes add a splash of olive oil to moisten it. Continue to mix and add olive as necessary until the dough comes together into a slightly tacky, but not sticky ball. Continue to knead in mixer for 3 minutes after it comes together.
    2. Shape the dough into a ball and wrap it tightly in plastic wrap. Leave it out on the counter to rest for at least 30 minutes.
    3. Divide the dough into 4 and begin to shape into desired pasta.
