Zucchini Potato Pancakes - cooking recipe

Ingredients
    1 c. unpeeled zucchini
    2 med. potatoes, peeled and grated
    1 tbsp. finely minced onions
    3 eggs
    1/4 tsp. salt
    Dash pepper
Preparation
    Stir vegetables into mixture of beaten eggs, salt, and pepper. Lightly
    oil (or spray with non-stick spray) a griddle or skillet. Use 1/4 cup
    of batter for each pancake. Flatten the batter with a fork and fry
    until brown and crisp, about 5 minutes on each side. Makes 8-10
    pancakes.
