Sausage Balls - cooking recipe

1 lb hot Italian sausage out of the casing
1 lb mild Italian sausage out of the casing
2 cups grated cheddar cheese
1 cup bisquick
Preparation

Heat oven to 350 degrees. Mix together sausage and cheese until well blended. Add bisquick and mix until all the bisquick is mixed in and you can handle the meat without too much sticking.
Use a large mellon baller or shape into walnut sized balls with your hands. Place on a high sided cookie sheet and bake for about 25 minutes until brown on the bottom. Carefully remove from the oven because there will be lots of fat in the pan. Let stand on the pan for a minute, remove and wipe and pour all the excess fat off before starting another batch. You can use silpat to make cleanup easier.
