Bucket O' Chili - cooking recipe

Ingredients
    Onions, chopped - LOTS Of them (I used 4 huge vidiia's)
    Yellow Peppers, chopped (I used 4 smaller one)
    small can chipotle peppers - take out the peppers, mince them up (don't use sauce)
    cumin (lots, I think I probably put in 3-4 T)
    2 small smoked ham hocks
    4 28oz can beans, well drained (I used 2 black bean, 1 kidney, 1 garbanzo)
    3 28 oz cans crushed tomatoes (I use 1 with jalopeno, 1 with fire roasted, and 1 with celery & onion)
    1/2 c brown sugar
    4 cups very strong chicken broth (I used 4 cups chicken broth PLUS 2 T better than chicken boullion)
    1/2 bar 72% chocolate (from trader joe's)
Preparation
    Saute onions and peppers until onions are golden
    Add in chipotles and cumin, stirring for 1 minute
    Add everything else except chocolate
    Bring to boil. Simmer for 1-2 hours
    At end, melt in chocolate.
