Black Bean Soup - cooking recipe
Ingredients

2 TB olive oil
half onion, diced
1 carrot, shredded
2 cloves garlic, chopped
1 tsp cumin
1 tsp oregano
1 can Rotel with cilantro and lime
1 qt chicken broth
2 cans black beans, mashed or processed
1 cup (or more) frozen corn
sour cream
shredded cheddar
Preparation

Saute onion and carrot in olive oil. When soft add garlic and saute 1 minute. Add cumin and saute 1 minute.
Add can tomatoes and oregano and simmer until some juice evaporates.
Add broth and bring to low boil.
Lower to simmer and add black beans. Stir to incorporate. Add corn and simmer 10 minutes.
Season with salt and pepper. Add hot sauce if desired.
Ladle into bowls and to with sour cream and shredded cheddar.
