Cream Of Potato Soup - cooking recipe

Ingredients
    1 Tablespoon olive oil
    2 medium (300g) onions, chopped
    5 medium (1kg) old potatoes, peeled, chopped
    1.5 litres chicken stock
    300ml cream
    (1/2 cup finely grated parmesan cheese, 2 Tablespoons finely chopped fresh sage)
Preparation
    Heat oil in pan, add onions, cook, stirring, until soft. Add potatoes and stock, simmer, uncovered, about 20 minutes or until potatoes are tender. Blend or process mixture in batches until smooth, return to pan; add cream, simmer, stirring, until heated through.

    If using parmesan and sage stir into soup before reheating.
