Chocolate Espresso Cookies - cooking recipe

8 oz semi-sweet chocolate
1 stick butter
2 eggs
3/4 c sugar
2 1/4 t instant espresso powder
2 1/4 t vanilla
1 c semi-sweet chocolate chips
1 c chopped pecans (optional)
3/4 c flour
1/4 t baking powder
1/4 t salt
Preparation

Preheat oven to 350 and line two baking sheets with parchment paper. Melt chocolate and butter together in microwave. Using electric mixer, beat eggs and sugar with espresso and vanilla. Add melted chocolate and butter. Mix in dry ingredients. Slowly mix in chips and nuts. Drop by heaping tablespoons onto parchment lined cookie sheets. Bake 11-12 minutes. Cool 5 minutes before removing from baking sheets.
