Ingredients

1 quart whole milk
1/4 teaspoon salt
1 cup white rice, rinsed and drained
2 eggs
1 cup evaporated milk
1 teaspoon vanilla
1/2 cup sugar
1/2 cup raisins, parboiled 15 min.
Preparation

Place milk and salt in saucepan, when milk is warm, add rice. Bring to a boil and then reduce to a simmer stirring continually until rice is tender; about 45 minutes.
In a large bowl, blend the eggs, 3/4 cup of evaporated milk, vanilla and sugar; set aside.
Add 1/4 cup evaporated milk to rice and stir; add raisins. When mixture is thickened, spoon 1 cup of rice mixture into egg mixture; stir slowly and pour egg mixture into remaining rice. Cook until mixture becomes bubbly and thick. Pour into bowl and sprinkle with nutmeg.
