Improved Lobster Roll - cooking recipe
Ingredients

Meat from a 1.5 pound lobster or from two 6-8 ounce tails, cooked in any fashion (grilled, poached, boiled, etc. - great for using leftover lobster, if such a thing exists!)
2 tablespoons chopped fresh tarragon
2 tablespoons chopped fresh chives
2 tablespoons fresh squeezed lemon juice (about the amount of juice from half of a large ripe lemon)
2 stalks celery, diced
Merely enough real mayonnaise to bind the above ingredients (usually one strong squeeze of a Mayo container-about 2 ounces)
2 top-split lobster rolls (or other roll if true lobster buns not available)
Bibb or leaf lettuce
Preparation

Spread lobster rolls with butter on each side and toast in a pan over medium heat for 2-3 minutes per side. Line the inside of the bun with a piece of Bibb or leaf lettuce. Mix all the remaining ingredients together, salt and pepper to taste and spoon the mixture into the toasted roll.
