Senator Russell Sweet Potatoes - cooking recipe
Ingredients

Potatoes:
Enough sweet potatoes to make 31/2 cups mashed sweet potatoes (I used
the ones from the can, but obviously you can use fresh)
1/2 cup sugar
2 eggs
1 teaspoon vanilla
1/2 cup milk
1/4 cup butter, softened ( margarine would work, I'm sure)
Topping:
1/2 cup brown sugar
1/3 cup flour
1/4 cup butter, melted
1 cup pecans
Preparation

Sweet potatoes:
1. Bake sweet potatoes at 450 for 1 hour.
2. Scoop potato from shells.
3. Combine potatoes, sugar, eggs, vanilla, milk, and butter.
4. Place in large casserole.
Topping:
1. Combine brown sugar, flour, butter, and pecans.
2. Place on top of potatoes in casserole.
3. Cover casserole. (This can be made a day ahead up to this point.)
4. Bake in oven at 275 for 50 minutes.
5. Uncover for last 10 minutes of baking.
