Braised Buffalo Chicken - cooking recipe

Ingredients
    2 tablespoons oil
    8 boneless skinless chicken thighs
    2 cups sliced onions
    1 teaspoon celery salt
    1 tablespoon smoked paprika
    6 ounces light beer
    1/4 cup hot pepper sauce
Preparation
    Put oil, chicken thighs, and onions in a large heavy-bottomed pot over medium heat. Cook, stirring occasionally, for 15 minutes. Add the celery salt and smoked paprika, and stir well. Pour in the beer and simmer for 15 minutes. Stir in the hot sauce and cook over medium low until almost all of the liquid has evaporated and the chicken is falling apart.
    Service portions of Buffalo Chicken over steamed white rice or use to make Nachos.

    To Make Nachos:
    Place tortilla chips (1 large bag full) on an oven-proof platter. Top with 2 cups Barised Buffalo Chicken, 1/2 cup crumbled blue cheese, 1/2 cup chopped onion, 1/2 cup chopped celery and 1/2 cup chopped tomato. Put platter in a preheated 450 degree oven for 2 to 5 minutes or until cheeses is melted.
