Ingredients

3/4 cup all-purpose flour, sifted
2/3 cup cocoa powder, sifted
1/2 tsp baking powder
3/4 cup butter, at room temperature
1 tsp vanilla extract
1/2 cup granulated sugar
2 None eggs
1 tbsp milk
4 cups chocolate ice cream, slightly softened

Preheat oven to 350\u00b0F. Combine flour, cocoa powder, baking powder and 1/4 tsp salt. Cream butter, vanilla and sugar until pale and fluffy. Beat in eggs and milk then add flour mixture and mix until just combined. Shape into 2 flat discs. Wrap in plastic wrap and chill for 1 hour.
Roll dough out then cut into 2 1/2 inch discs. Transfer to a baking sheet lined with parchment paper. Chill for 30 mins, until firm. Prick cookies with a fork. Bake for about 15 mins, until firm. Let cool on a wire rack.
Sandwich chocolate ice cream between cooled cookies. Use a palette knife to clean around edges. Freeze until firm.
