Spicy Potato, Red Onion And Pepper Bake - cooking recipe

Ingredients
    2 lbs Yukon Gold potatoes, peeled and cut into long, thick slices
    1/2 tsp smoked paprika
    1/2 tsp ground cumin
    2 cloves garlic, crushed
    1 None lemon, peel finely grated
    3 tbsp extra virgin olive oil
    1/2 tsp salt
    2 large red peppers, halved, seeded and cut into large chunks
    1 large red onion, cut into thick wedges
Preparation
    Preheat the oven to 400\u00b0F. Place potatoes in a large saucepan. Cover with cold water and add a few pinches of salt. Bring to a gentle simmer. Cook for 5 mins, then drain.
    Mix paprika, cumin, garlic, lemon peel, oil and salt in a large bowl. Add drained potatoes while they are hot and toss carefully. Add peppers and onion and gently toss again.
    Transfer to a roasting pan lined with parchment paper, scraping in all the seasonings. Spread vegetables so they are mostly in a single layer.
    Bake for 20 mins. Remove from oven and turn vegetables with tongs to encourage even browning. Bake for 25-30 mins, until golden. Serve hot.
