Green Beans Salad - cooking recipe
Ingredients

2 tbsp olive oil
1 tbsp balsamic vinegar
1/2 tsp Dijon mustard
1 tsp chopped garlic
1 tsp chopped fresh thyme leaves
1/2 lb green and / or yellow beans
3/4 cup small halved grape tomatoes
1 None small yellow pepper, diced
None None curly leaf lettuce, for garnish
Preparation

In a large bowl, whisk together olive oil, vinegar, mustard, garlic and thyme. Season with salt and black pepper, if desired.
Place beans and 3 tablespoons of water in a microwave-safe bowl. Cover and cook on high for 3-4 mins or until tender. Rinse in cold water. \r\n\r\nAlternative cooking method: in a pot over high heat, boil enough salted water to cover the beans. Cook beans for 3-4 mins or until tender. Rinse in cold water. \r\n\r\nToss beans, tomatoes and pepper together with vinaigrette.
In a bowl combine the beans, tomatoes, pepper and lettuce and mix with dressing.
