Baked Fish With Mediterranean Crumb - cooking recipe

Ingredients
    4 None thick white fish fillets, skin removed
    3 None small tomatoes, thickly sliced
    2 tbsp fresh breadcrumbs
    2 oz kalamata olives, chopped
    1/2 None small red onion, finely chopped
    2 tbsp chopped fresh flat-leaf parsley leaves
    1 clove garlic, minced
    1 None lemon, zested and juiced
    None None steamed green beans and sugar snap peas, to serve
Preparation
    Preheat oven to 400\u00b0F. Line a large baking tray with parchment paper. Place fish in single layer on tray. Season to taste. Arrange tomato slices over fish.
    In a bowl, combine remaining ingredients. Sprinkle evenly over fillets, pressing mixture on firmly. Coat with olive oil and bake for 15-20 mins, or until cooked to your liking and crumbs are golden brown. Serve with green beans and sugar snap peas.
