12 slices whole wheat bread
8 slices bacon
4 None hard-boiled eggs, roughly chopped
5 tbsp mayonnaise
2 tbsp fresh parsley leaves, chopped
2.5 oz baby spinach
Preparation

Preheat broiler. Toast bread then let cool. Broil bacon for 4-5 mins, until crisp and golden, then let cool. Combine eggs, mayonnaise and parsley. Season. Spread over 4 slices of toast. Top with spinach and bacon. Season. Sandwich with remaining toast.
