Apple Canberry Walnut Turnovers - cooking recipe

Ingredients
    3 tbsp butter + 5 tbsp, melted
    4 None medium apples, peeled and chopped finely
    1/4 cup firmly packed brown sugar
    2 oz dried cranberries
    2 oz coarsely chopped toasted walnuts
    1 tsp ground cinnamon
    2 tsp lemon juice
    12 sheets filo pastry
Preparation
    For the filling, melt the 3 tbsp of the butter in a large frying pan and add the apple. Cook, stirring, about 10 mins or until the apple is tender. Add the sugar and stir until dissolved. Remove from heat and stir in the cranberries, nuts, cinnamon and lemon juice. Cool.
    Preheat oven to 425\u00b0F. Grease 2 baking sheets. Stack 4 sheets of pastry and cover the remaining sheets with parchment paper and a damp dish towel. Cut 6 x 4 inch rounds from the stacked pastry sheets. Brush each layer with melted butter. Repeat with remaining sheets to make 18 rounds total.
    To assemble, divide apple mixture between the pastry rounds. Fold to enclose the filling, pressing the edges together. Brush tops with remaining butter. Bake about 8 mins or until browned lightly. Serve warm.
