Vanilla Ceviche - cooking recipe

Ingredients
    1 None shallot, peeled and finely diced
    1/2 None lemon, juiced
    1/2 None vanilla pod, halved lengthways and seeds scraped out
    200 g cod fillet, cut into cubes
    2 None green and 2 black pitted olives, halved
    3 None red and 3 yellow cherry tomatoes, quartered
    4 sprigs fresh coriander, chopped, plus extra sprigs for garnish
    3 sprigs fresh chives, chopped
    2 tbsp olive oil
Preparation
    Mix the shallot, lemon juice and vanilla seeds. Add the cod and turn until coated. Season with salt and black pepper and chill for 15 mins.
    Add the olives, tomatoes, cilantro and chives and stir. Drizzle with olive oil and serve garnished with more cilantro.
